More Technical Info:
The vineyards are located in the village of Brethen, just south of Epernay. The vines are 20+ years old and planted in clay and limestone soil. No herbicides or pesticides are used. Fruit is hand-harvested, fermented and aged in stainless steel with full malo-lactic fermentation. The wine is then aged for 21 months on the lees in bottle before final dosage and release.
